Any baking that is easy to throw together in the bowl and stick in the oven, is my kinda baking. And when my daughter helps out, even better! (though I must make a note to myself to stir after her to make sure everything is mixed well.)
Ingredients
- 3 large over-ripe bananas, mashed
- 1/3 cup melted butter
- 1 scoop Vanilla Juice Plus+ Complete
- 1/2 cup sugar (or less)
- 1 egg, whisked
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 1/2 cup flour
- pinch salt
Servings: loaf
Instructions
- Preheat oven to 350 degrees.
- Mash the bananas in a large mixing bowl.
- Melt butter.
- Add all other ingredients to the bowl of bananas.
- Empty contents of bowl into a oiled loaf pan.
- Cook for 40-60 minutes. Watch for the loaf to start turning lightly brown. Check doneness with a toothpick. Toothpick will come out clean when the loaf is done.
- Let cool. Store in foil.
