Instructions
  1. Preheat oven to 425 degrees.
  2. After peeling your sweet potato, cut into 1/2 inch circles. And boil in a pot of water until just tender enough to start to poke through with a fork.
  3. Place sweet potatoes on an olive-oil coated roasting pan. Do not let the pieces overlap.
  4. Place a small sliver of butter on top of each sweet potato piece, and some garlic. Then sprinkle with salt, pepper, Italian seasoning (or oregano). Grate fresh Romano cheese on top.
  5. Gently place pieces of spinach on top of each piece.
  6. If you like more cheese, grate a little more Romano cheese over the spinach.
  7. Place in the oven for ~25 minutes. Keep checking to make sure they do not burn.
